Summer is a busy time for a lot of people one of the best ways to ensure you are eating healthy is to find simple fresh recipe that can be whipped up quickly. This recipe definitely meets those requirements and you can put your own spin on it if you are missing an ingredient. This Easy Strawberry Pear & Quinoa Salad checks all the boxes but most importantly it smells and tastes absolutely fantastic!
Quinoa is gluten-free and an excellent source of protein (a complete protein because it contains all 9 essential amino acids), it also contains fibre, vitamin B, Vitamin E, iron, magnesium, calcium, potassium and zinc. It also contains antioxidants, you can easily see this is a really clean way to add protein to any salad or favourite bowl. If you are not a fan of quinoa you can easily substitute for chickpeas or your favourite protein source. Make this recipe work for you.

The Recipe
PrintStrawberry Pear & Quinoa Salad
Makes: 4 servings
Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients
6-8 cups arugula or spinach
½ cup dry quinoa
½ cup strawberries, sliced
1 pear, sliced
¼ cup red onion, slices
Tahini Dressing
2 tablespoons tahini
1 tablespoon pure maple syrup
1 tablespoon lemon juice
1-2 tablespoons water
Dash of salt
Directions
- In a medium pot add quinoa and water and cook according to package directions. Cool for 5-10 minutes.
- In a large plate or bowl cover bottom with arugula, top with cooked cooled quinoa, add pear, strawberry and onion slices.
- In a small bowl make dressing by adding tahini, maple syrup, lemon juice, water and salt. Start with 1 tablespoon of water and add more until desired consistency. Stir well and drizzle over salad just before serving.
