This Best Ever Golden Vegetable Soup is so nourishing for your body and gut microbiome. It has 6 plant-based food sources, which also means more vitamins, minerals and fibre. But the real reason it’s the best soup, is the nourishing spices and fragrant aroma. So warming.

Soup is a really lovely lunch this time of year, it’s a one pot meal so it’s easy to make. It’s versatile and totally customizable see the notes below on spices, protein sources and veggies. I love to prep a Soup on Sunday and individually portion it out so I don’t have to think about lunches during the week. I can simply pull it out, heat it up and feel amazing. Sharing just in case you want to set your week up for success today too.

Make this easy vegetable soup with whatever veggies you have on hand. Soups are a great way to add in more nutrients and vegetables into your day.

White beans are an amazing plant-based protein source that contain fibre. Typically my go to beans for soup are chickpeas or black beans but it’s nice to change it up so your body is getting a variety of different nutrients. The more variety and diversity in your plant-based foods sources the more nourished your gut microbiome will be. When you cook this week, see how you can add in some new ingredients or to switch up your go to recipes by adding in a different vegetable, spice or protein source.

I love to add in spices for an increase in flavour, aroma and health benefits. Turmeric is a great addition to soups because it has so many benefits. It is: an immunity booster, anti-fungal, anti-inflammatory, anti-cancer, antioxidant, helps controls blood sugar, improves digestion and has healing properties. Why not try adding a little bit more into your meals this week?

As always make this recipe work for you, if you only have chickpeas on hand add them in instead of the white beans. Sometimes I add in cooked brown rice (see not in recipe section) and sometimes I leave it out, it depends on how hungry or hearty you want your soup. You can always add in more vegetables too. Things like parsnips, yellow bell pepper, celery, kale or baby spinach would be a lovely addition. Have fun exploring while cooking.

The Recipe

Best Ever Golden Vegetable Soup

Makes: 4-6 servings

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients

1 tablespoon avocado oil (or extra virgin olive oil)

3-4 cloves garlic, minced

1/4 yellow onion, diced

2 carrots, peeled and chopped

1 medium sweet potato, peeled and diced

1 head broccoli, chopped (1-2 cups)

2 cups cooked white kidney beans (or 1 16 oz.can drained and rinsed)

8 cups vegetable broth

2 tablespoons yellow curry powder (optional)

1 teaspoon turmeric

1 teaspoon chili power

1 teaspoon paprika

1/2 teaspoon ground cumin

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Directions

1. In a large pot over medium heat add cooking oil, garlic onions, and saute for 1-2 minutes. Add in carrots, sweet potato and broccoli and cook for 5-7 minutes stirring frequently to avoid sticking.

2. Add in vegetable broth, white kidney beans, curry, turmeric, chili powder, paprika, cumin, garlic and onion powder. Stir well and simmer on low until vegetable are fork tender.

Recipe note – you can omit the curry and spices if you are not a spice fan. I love to add them in for the extra health benefits and fragrant flavours. You can also add 1 cup cooked wild or brown rice depending on your nutritional needs.
