Vegetable Barley Soup

Winter in Canada can be cold and one of my favourite ways to warm up is with a nourishing bowl of homemade soup. Not only does it warm you up but it’s also easy to make as it only uses one pot, it is also healthy because it is loaded with vegetables which provide key nutrients like vitamins, minerals and antioxidants. Soups are great because they are really versatile too, you can toss in fresh or frozen veggies, I like to use up any veggies that are leftover in the fridge from the week this way you can avoid them spoiling or going bad which saves you money and avoids food waste. Win win!

Our family loves to eat soup as a main meal, it is a great dinner, you can customize the veggies to your family’s preferences. Sometimes I will add noodles for the kiddos or quinoa for the hubs. If you’re not a chickpea fan you can always substitute for 2-4 boneless chicken breasts or thighs. The apple cider vinegar in this soup provides such a depth in flavour it will make this your new favourite soup.

The Recipe

Vegetable Barley Soup

Makes: 4-6 servings

Prep Time: 10 minutes

Cook Time: 25-30 minutes

Ingredients

1 tablespoon avocado oil

2-4 cloves garlic, minced

½ yellow onion, diced

2 carrots, peeled & diced

2 stalks celery,  diced

1 sweet potatoes, peeled & cubed

2 cups chopped green cabbage

6 cups vegetable broth

1/3 cup pearl barley

1 can chickpeas

¼ cup apple cider vinegar (white wine vinegar works too!)

2 tablespoons tamari (or soy sauce)

1 teaspoon thyme

1 teaspoon parsley

1 cup frozen peas

Directions

1.     In a large pot over medium heat add oil, garlic and onion and cook for 1-2 minutes.

2.     Add in sweet potatoes, carrots, celery and cabbage and cook another 4-5 minutes stirring frequently to cook evenly and avoid vegetables from sticking.

3.     Add in broth, barley, chickpeas, thyme, parsley, apple cider vinegar, and soy sauce and simmer over low/medium heat until barley and veggies are cooked about 20 minutes.
