Apple & Almond Crunch Salad

As most of you know I am working on a Detox Program so I have been creating so many new recipes to include for this real food reset. I have worked hard to use ingredients that are fresh, and support the bodies natural detoxification process.

Almonds, apples, cruciferous veggies, lemon and ginger are all super food when it comes to detoxing the body from the inside out. That is how this salad was created. We tend to be creatures of habit and end up eating the same old boring salad or bowl each week. My goal is to keep switching things up so you have SO many options of fresh spring and summer salads.

So far on the blog we have over 10 homemade dressing recipes and I am happy to include another one this week and it’s one of my new favs. Keep reading to grab this salad recipe as well as my new Lemon Ginger Dressing.

This salad works as an easy lunch or healthy dinner. This recipe is:

  • gluten-free
  • dairy-free
  • vegan

The Recipe

APPLE & ALMOND CRUNCH SALAD

Makes: 2-3 servings

Prep Time: 10 minutes

Ingredients

2 cups arugula or spinach, chopped

1 cup cauliflower, finely chopped

2 carrots, peeled and shredded (about 1 cup)

½ cup red cabbage, finely chopped

½ cup almonds, chopped

1/3 cup craisins (dried cranberries or fresh)

2 cups chickpeas or 1-2 cooked chicken breast cubed

1 granny smith apple, diced into bite size chunks

Directions

In a large bowl or container add all ingredients except apples and mix well.

Serve in bowl and top with balsamic or lemon ginger dressing and fresh apples.

LEMON GINGER DRESSING

½ cup lemon juice, freshly squeezed

¼ cup olive oil

1 inch fresh ginger, peeled and shredded

½ tablespoon maple syrup

dash of sea salt or garlic salt

Directions

1. Blend in small food processor and store in jar in fridge for up to 1 week.

Tip – I like to double dressing batch. I like to add honey sometimes instead of maple syrup for a honey lemon ginger dressing.
