Happy Long Weekend to my Canadian Friends!
With the long weekend in mind I decided to post Sundays recipe early so you can whip up this tasty snack for the family.
The Victoria Day long weekend is always an exciting weekend because it feels like the start of summer which means longer, warmer days filled with more fun outdoors. I know our family loves to spend our summer days at the cottage, beach or in the forest. It’s important to fuel life’s adventures so you can do rad stuff together. So to kick off the weekend I wanted to share this easy healthy kids snack board “recipe”.
Charcuterie boards are all the rage right now, the hubs and I often make them for date night because they are fun and so easy to customize. Typical boards are loaded with meat and cheese. I wanted to create a healthier version that is still fun, colourful and delicious. My kids love the snack boards and I hope your kids will too.
Feel free to customize your board to your family’s liking. We often get a few boards going so feel free to make more than one.
The Recipe
PrintKIDS SNACK BOARD
Ingredients
¼ -1/2 cup walnuts (or roasted chickpeas)
¼-1/2 cup almonds
¼-1/2 cup peanuts
¼-1/2 cup pumpkin or sunflower seeds
¼-1/2 cup blueberries
¼- ½ cup raspberries
¼-1/2 cup blackberries (or any fruit you have on hand)
¼ -1/2 cup avocado, cubed
¼ – ½ cup cucumber, sliced
¼-1/2 cup carrot sticks
¼ -1/2 cup red pepper, sliced or cubed
¼-1/2 cup goji berries
Directions
1. On a very cute or colourful board place 12-15 reusable muffin liners or small bowls.
2. Fill each bowl with a different healthy food listed above or whatever you have in your fridge or pantry. Think nuts, seeds, fruits, veg, homemade chia crackers, roasted chickpeas, lentil balls, or any super foods.
3. Make it fun and enjoy!
Note – you can also make healthy kabobs for snacks or desserts using fruit and nut butter.
I highly recommend getting your kids involved in the fun of making this healthy food board. Teach them that healthy eating can be so much fun and also delicious. By getting them involved they are more invested in learning what is healthy and also wanting to eat what you create because it’s somewhat their choice.
If you make this recipe I would love to hear what you think in the comments below or tag me in your pics on the socials @pam_rocca. As always sharing is caring, if you know someone who would love this recipe I would so appreciate you sharing it with them.
Happy Snacking,
