Garlic Shrimp Zucchini Noodle Pasta

As most of you know I am finishing up my second cookbook and finding time to cook our own family meals has been a bit of a struggle. I get the meal time dilemma wondering “what the heck to make for dinner?” and sometimes finding yourself in a food rut. That is one of the reasons I love this community you inspire me to continue to create so I can keep you inspired in the kitchen….even through busy seasons. During busy seasons it’s even more important to nourish your body with foods that will give you the energy you need. I absolutely love this Garlic Shrimp dish as it’s a healthier alternative to pasta, it’s lower in carbs and calories and high in protein and healthy fat.

Shrimp has a fantastic nutrition profile it provides 20 different vitamins and minerals including selenium. This mineral can help reduce inflammation and promote heart health. Shrimp is also a great source of vitamin B12 and iron. Iron in your red blood cells is called hemoglobin. Hemoglobin is important for taking oxygen to your blood from the lungs, if you don’t have enough iron your body can’t make enough healthy oxygen-carrying red blood cells which can lead to a lack in energy.

I know the Holiday’s are quickly approaching and a lot of people I have been speaking with have mentioned how many overwhelming this time of year can seem. I just wanted to make it as easy as possible to keep yourself well fuelled so you can have the energy you need to get things done. This recipe comes together in under 10 minutes, this makes it so much easier to get dinner on the table. If your kids or family will not do zucchini noodles you can substitute with chickpea noodles or your favourite pasta.

If you follow a plant-based lifestyle you can make this dish vegan by omitting shrimp and substituting with 1 package extra firm tofu, cubed. The idea is to get inspired to get creative in the kitchen and make recipes that work for you and your family.

The Recipe

Garlic Shrimp Zucchini Pasta

Makes: 3-4 servings

Prep Time: 5-10 minutes

Cook Time: 10 minutes

Ingredients

¼ cup avocado oil

30 shrimp, tails removed

3 tablespoons minced garlic

½ tablespoon paprika

1 ½ teaspoons parsley

1 teaspoon onion powder

2 zucchini’s spiraled into noodles (or 3 cups)

½  cup broccoli

½ cup cauliflower

1/4 cup red cabbage

½ red pepper

salt and pepper to taste

Direction

1.     In a large frying pan over medium to high heat add 1 tablespoon avocado oil and sauté broccoli, cauliflower, red cabbage and red pepper for 5 minutes until slightly golden.

2.     Remove from heat and set aside in a bowl.

3.     Add remaining avocado oil into frying pan over medium heat and allow oil to heat until hot about 1 minute. Add in garlic and cook for another minute until golden and fragrant.

4.     Add in shrimp, paprika, salt and pepper and cook for 4 minutes.

5.     Add zucchini noodles and vegetable mixture into frying pan and mix quickly to combine. Do not over cook, you just want the zucchini noodles to warm.

6.     Garnish with parsley and serve warm. Option to top with microgreens for more nutrients and to make your dish look fancy.

Recipe Tip – This recipe is versatile when it comes to veggies, add your favourite veggies or whatever you have in the fridge and want into your pasta.
